I just made pineapple extract out of the peeling, core, top & bottom of a super delicious locally grown, nice, ripe pineapple - basically the bits that would have been put in the compost bin. Just poured high proof alcohol on the trimmings to cover, in a large glass jar for 3 - 4 days, then strained through several layers of cheesecloth. It is freaking glorious. Add 3 drops to a cocktail & it’s a fragrant, delicious game changer. Makes my oak barreled mescal cocktail even better. A few drops will just light up so many specialty cocktails. It’s got a great shelf life. Could make extract out of anything, super ripe fruit, spices, berries….just ordered dark brown glass dropper bottles, this is big guys. The creative possibilities are endless…
