Juliette Low Birthday Cupcake Extravaganza @ Pure Joy Catering
Pure Joy hosted 150 Girl Scouts from Goleta to Carpentaria who came together to celebrate the organization’s Founder’s birthday. Girls ranging in age from Kindergarten to Eighth grades spent the afternoon making and decorating cupcakes at Pure Joy Catering’s Santa Barbara kitchen.
Pure Joy’s ovens were filled with chocolate cupcakes made by the girls using a recipe provided by Amber Vander Vliet of ‘Enjoy Cupcakes’.
The recipe doesn't use any perishable items (like butter and cream), so is perfect for camp cooking! The girls had a fantastic time being creative and decorating their cupcakes. The older girls also made camp ovens using cardboard boxes, foil and coal to cook their cupcakes. It only took 20 minutes for 12 cupcakes to cook in the camp ovens.
Recipe for “Depression Era Cupcakes”
DRY;
1 ½ cup Flour
¾ cup Sugar
¼ cup Cocoa
1 tsp Baking soda
¼ tsp Baking powder
½ tsp Salt
WET;
1/3 cup Canola Oil
1 cup Water
½ tsp Vanilla
1 tbl Vinegar
Preheat oven to 325 degrees F
First mix dry and wet ingredients in separate bowls.
Then combine ingredients, mixing well with a wooden spoon.
Spoon batter into cupcake baking cups.
Cook in oven (325F) for about 20-25 minutes.
When cool, apply frosting (if you can wait that long! Yum!)
Powdered Sugar Frosting;
1 ½ tbl water (or heavy whipping cream)
1 ½ cup sifted powered sugar
½ tsp vanilla
Heavy whipping cream can be used in place of water for a creamy & yummier result. Additions like lemon zest, orange zest, almond extract, berry puree, etc. can be added for flavor variation
Directions:
Combine ingredients and whisk vigorously in a bowl, until smooth.
Spread on cupcakes with an offset spatula.
