80th Birthday & 50th Anniversary Independence Day Celebration
We had the exciting pleasure of catering a themed Fourth of July celebration at the home of Doris and Rodger. This event commemorated not only the national holiday but also their momentous birthday and anniversary. They had a fun time embracing the red, white, & blue theme (and so did we!) with this custom menu perfect for their friends and family.
"We are so happy with Pure Joy. Everything went well and was more than we expected. The supper that was left for later was easy for me to serve and every last drop of the chili was eaten.
I do have a request. My grandson is celiac which is the reason for the GF (gluten free) cookies. Do you share your recipes? (BELOW) He loved those cookies as did everyone else.
My favorite was the chocolate cake. But all the food was delicious.

Gluten Free & Vegan Oatmeal Cookie Recipe
Ingredients
8oz Coconut Oil
1cup Sugar
1 Ener-G Egg Replacer
8oz Gluten Free Flour
3cups Old Fashioned Oats
2cups Chocolate Chips
1tsp Vanilla Paste
1tsp Maldon Salt
1/2tsp Baking Soda
1/2tsp baking powder
Tip on How to use Ener-G Egg Replacer
To prepare your ener-g egg simply combine 1 tablespoon of egg replacer with 2 tablespoons of water. You could of course use a regular egg and butter if you’d like a non-plant-based treat
Instructions
Preheat your oven to 350 °F
Melt the coconut oil and mix in the sugar, the vanilla paste, and the egg replacer.
Slowly add the Gluten free flour previously sifted. Then add the salt, the baking powder
and the baking soda. When well incorporated, add in the oats and the chocolate and mix well.
You can now roll out the dough thinly and cut out to the desired shape.
Spread the cookies on silicone baking mats and sprinkle some more Maldon salt on each cookie
Bake for approximately 12 min, the cookie should be golden brown.
Make sure to let them cool down fully before serving, to ensure consistency as they will be way more fragile than a non-plant based cookie.
